Wednesday I decided to make a Tilapia Chowder for dinner, and it was good. Not as good as salmon, but still good. This is such a foreign concept to me! Maybe I'll keep this preference for fish after the baby is born, because it's certainly a healthy meat to enjoy. Anyway, I've included the recipe for all you fish lovers out there. It was the perfect combination of flavors, with just a hint of fishy-ness.
Tilapia Chowder
2 cans cream of potato soup
2 c milk
1 c frozen corn
1/2 c green peppers (diced)
15 oz tilapia
crumbled bacon
1 roma tomato (diced)
4 stocks green onion (chopped)
In a pot combine soup, milk, corn and bell pepper. Bring to a boil. Reduce heat; cover and simmer 5 minutes or until bell pepper is tender. Stir in fish; simmer 3 to 5 minutes or until fish is flaky. remove fish and cut/flake into eatable pieces.
Ladle soup into 4 bowls. Sprinkle with tomato, green onion, and bacon.

We keep frozen diced green peppers, so this was probably one of the easiest home made meals I've ever made! Anyone can throw ingredients into a pot and stir it up. We will definitely be making this recipe again!
Wow! Isn't that weird how your tastes change during pregnancy? I've always hated fish, too. Glad you're able to eat it now!
